Recipe for Cucumber and Japanese Mountain Yam Jelly

This is not so accessible as the other recipes because the mountain yam is not so easy to find..  It can be found in some Japanese or Chinese or Korean supermarkets... you would have to ask for nagaimo or yamaimo or yamatoimo in Japanese... or ma in Korean ... or look up on Wikipedia (under Dioscorea opposita) for the Chinese equivalent... (Chinese Mountain yam)

This is good to serve up for a starter .. it looks good .. and combines hot wasabi with cool, refreshing cucumber ...
